Visit Gallery →Desh Fernando is a chef, forager, and filmmaker based on Vancouver Island. Trained at George Brown College, he spent twelve years as a documentary filmmaker and photographer before coming to the kitchen full-time — and the two worlds have never really separated.
He currently cooks at Deep Cove Winery on the Saanich Peninsula, where he runs a documented fermentation program — tepache, black garlic, foraged blackberries and plums, ginger sodas, and wine grapes bound for wine ice cream — carrying wild and local flavours past their season. Previously he cooked at Roar in Tofino, one of BC's few live-fire, open-kitchen restaurants.
Fire runs through everything. His fourteen-episode wild-cooking series, Wild Kitchen, was built almost entirely on foraged ingredients that met the flame before they met the plate. He teaches sourdough and fresh pasta, has cooked a number of chef's tables, and is building toward a coast-to-coast Canadian culinary project rooted in the same fire-and-forage philosophy.

It all began when Desh baked his first sourdough loaf in his condo — hooked by the taste, smell, and texture. A neighbour's simple suggestion turned into a workshop, and a community was born.
